AVIAL


Ingredients:
Carrot: 1
Drum stick: 1 big
Pumpkin: a small piece
Potato: 1
French beans: 6
Oil: 2 tbsp
Onion 1 sliced
Curd: ½ cup
Coconut: a small piece
Mustard seeds: 2 tsp
Green chillies: 4 nos.
Coconut milk: ½ cup
Curry leaves: 5 to 6

METHOD: Grind together the coconut, green chillies and 1 spoon mustard seeds to make a fine paste, adding very little water.  Peel and chop all the vegetables into 3-inch length. Cook the vegetables separately with very little water in a heavy-bottomed vessel with salt and turmeric powder.

Take a separate bowl and add oil, mustard seeds and onion.  Allow it to cook and then add the curry leaves.  Now add the boiled vegetables and fry.  When the vegetables are fried add the curd mixed in water and the coconut milk.  Allow it to cook for some time until the gravy becomes thick, taking care to prevent curdling.

Serve hot with rice.
