PUDINA RAITA



PUDINA RAITA

Ingredients:
Pudina leaves:  ½ cup
Onion cut into small pieces:  ½ cup
Zeera powder:  1 tsp
Chaat masala:  1 tsp
Salt: 1tsp
Water: ½ cup
Curd: 1 cup

Method:  Blend all the above ingredients except for curd in a blender making a fine paste.  Add this paste to the curd and mix it finely.  Decorate it with a few pudina leaves and serve with biryani.

HYDERABADI BAGARE BAINGAN


Ingredients:
Brinjal (medium size) - 8 nos.
Fenugreek seeds - 1/4 tsp
Cumin seeds - 1/4 tsp
Mustard seeds - 1/4 tsp
Curry leaves - 10 leaves
Green chillies - 4 nos.
Tamarind paste - 3 tbsp.
Coriander leaves - 2 tbsp.
Oil - 5 tbsp
Water - 2 cups

For the Masala:
Groundnuts - 2 tbsp
Coconut sliced-1 small cup
fenugreek seeds: 1/4 tsp
Cumin seeds - 1/4 tsp
Sesame seeds - 1tsp
Onions sliced - 2 small cups
Salt - as per taste
Red chilli powder - 1 tbsp
Turmeric powder - 1/4 tsp
Ginger Garlic paste - 1tbsp

METHOD:
Slit brinjals lengthwise but leave the stem on. Keep them aside in a dish filled with salted water or the brinjals will discolour. Dry roast all the ingredients of the masala separately, except for salt, chilli powder, turmeric  powder, ginger garlic paste. Grind them thoroughly in a blender, with the rest of the masala ingredients making a smooth masala paste.
In a deep bottomed dish, tamper the oil with cumin seeds, fenugreek seeds, mustard seeds, curry leaves and slit green chillies. Add the slit brinjals and fry them till you see a slight difference in the colour of the skin of the brinjals. Now pour in the masala paste into the dish and saute till the masala blends into the oil. Now add the tamarind paste and water. Cover and cook for 10 mins. on medium flame till the gravy thickens. Garnish with coriander leaves and serve hot with rice.

MARBLE CAKE


 

Ingredients:
Flour (maida)1 cup
Butter ½ cup
Sugar ½ cup
Eggs 2 nos.
Baking powder 1 tsp
Vanilla essence 1 tsp
Cocoa powder 2 tbsp

Sieve flour (maida) and baking powder in a bowl and keep aside.  Take another bowl and add butter and powdered
sugar and beat with an egg beater.  Add 1
egg and beat again.  Then add half of the
maida powder to the butter mixture and beat it nicely.  Again add another egg and then the remaining
maida powder and beat the mixture finely.  Now divide the mixture into two halves. To one half, add 2
tbsp cocoa powder and mix thoroughly.  Grease a baking tray and sprinkle maida on it. Now lay the plain cake batter and the chocolate batter side by side. (Take one spoon of the plain cake batter, and
then to the side of it add another spoon of the chocolate batter).  Repeat the process until the batter is
complete.  Bake this in the oven over 180
degrees C for ½ an hour.
